Cookies:
2 cups all-purpose flour
1/3 cup sugar
1 cup butter, softened
1 teaspoon instant coffee granules
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup finely chopped pecans
Glaze:
1/4 to 1/2 teaspoon instant coffee granules
1 tablespoon milk
1 cup powdered sugar
1 teaspoon butter, softened
Cooking Instructions
Preheat oven to 350 degrees F.
In a large mixing bowl, combine all cookie ingredients exept pecans. Beat at low speed, scraping bowl often, until will mixed. By hand, stir in pecans.
Shape rounded teaspoonfuls of dough into 1 inch balls. Place 2 inches apart on cookie sheets. Bake for 15 to 20 minutes or until edges start to bown lightly. Cool completely.
In a small bowl whisk together 1/4 to 1/2 teaspoon coffee granules and milk until granules dissolve. Stir in powdered sugar and 1 teaspoon softened butter until smooth. If thinner glaze is desired, stir in additional milk, 1/2 teaspoon at a time. Dip tops of cookies in glaze.
