Pumpkin Pecan Bread
This pumpkin bread recipe is filled with pecans,
nutmeg and cinnamon! Yummy!

- 9 x 5 inch loaves

2 1/2 cups all-purpose flour
1 cup whole wheat flour
3 cups sugar
2 teaspoons baking soda
1 1/2 teaspoons salt
2 teaspoons ground cinnamon

1 teaspoon nutmeg
1 cup vegetable oil
2/3 cup water
4 eggs
1 (16 ounce) can pumpkin (2 cups)
1 cup chopped pecans |
Preheat oven to 350
degrees F. Grease bottom only of two 9 x 5 or 3 - 8 x 4 loaf pans.
In a large bowl, combine flours, sugar, baking soda, salt, cinnamon and
nutmeg and mix well.
In a medium bowl,
combine oil, water, eggs and pumpkin; blend well. Add to flour mixture;
beat one minute at medium speed. Fold in pecans. Pour batter into greased
pans.
Bake at 350 degrees
F. for 60 to 70 minutes or until toothpick inserted in center comes out
clean. Cool 10 minutes and then remove from pans. Cool completely on wire
rack.
