Frosted Cashew Cookies
The rich flavor of this brown butter frosting makes this
delicate cookie my very favorite!

Yield: 4
dozen cookies

1 cup
firmly packed brown sugar
1/2 cup butter, softened
1/2 teaspoon vanilla extract
1 eggs
2 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda

1/3 cup dairy sour cream
3/4 cup salted cashews, coarsely chopped
Brown Butter Frosting:
1/2 cup butter (do not sub margarine)
2 cups powdered sugar
3 tablespoons half-and-half or milk
1/2 teaspoon vanilla |
Preheat oven to 375
degrees F. Lightly grease cookie sheets.
In a large bow, beat brown sugar and 1/2 cup butter until light and fluffy.
Add 1/2 teaspoon vanilla extract and egg; blend well. Add flour. baking
powder, baking soda and sour cream; mix well. Stir in cashews.
Drop by rounded teaspoonfuls
2 inches apart onto greased cookie sheets.
Bake at 375 degrees
F. for 8 to 10 minutes or until golden brown. Do not overcook. Immediately
remove from cookie sheets. Cool completely.
Heat 1/2 cup butter
in medium saucepan over medium heat until light golden brown. Remove from
heat. Stir in powdered sugar, half-and-half and 1/2 teaspoon vanilla;
beat until smooth. Frost cooled cookies.
